I've got a few ideas, but... well, I don't want to give her anything short of the best. I want it to be something she'll remember.

Well, a traditional first anniversary gift is either paper or a clock, if you want to go by that. If not, well, what is that she likes? What's something that she's mentioned wanting, but doesn't have? Makes her happy and proves you listen at the same time.
